Raspberry, macadamia, pistachio, white chocolate ice cream.

I had an Aunty and Uncle of mine coming over for dinner tonight but unfortunately I don’t see them very often as they live interstate. My Aunty loves ice cream so I made this up as I went and it was amazing!

You’ll need:-
4 egg yolks (be sure to freeze the whites and re-use later)
500g cream (good quality, I used Maleny Dairies)
500g milk (I used 4 Real Milk)
200g Sugar (I used organic raw)
1tsp vanilla bean paste
Pinch salt
2 handfuls of frozen raspberries
1 handful of pistachios
1 handful of macadamia nuts (halved)
1/2 a packet of white chocolate chips

This is what you’ll need to do:-
Place the egg yolks, cream, milk, raw sugar, vanilla paste and salt into TM bowl and cook for 5 mins at 80 degrees on speed 4.

Place the mixture into a flat container (I used a pyrex lasagna dish) and put it into the freezer for 6ish hrs (until firm but NOT frozen).

Remove the ice cream from the freezer and cut into ice cube-sized pieces. Place ice cream pieces into mixing bowl and blend 15 sec, speed 9. Then mix 10 sec, speed 4.

Add the pistachios, macadamia nuts, white choc chips and raspberries and mix with your spatula until combined.

Tip the mixture into a loaf tin and freeze for another 4-6 hours, or until frozen.

Serve with some fresh raspberries and pistachios scattered over the top.
