This is a really basic cupcake recipe, its super easy to make but its yum. I sometimes make large cupcakes, or tiny ones, either way they always work but your cooking time will vary.
Zest of one lemon (save the lemon for later)
90g butter, room temp
1 tsp vanilla paste or extract
100g caster sugar (or raw sugar, blitz on speed 9 for 3 seconds to create caster sugar)
2 eggs, room temp
150g self raising flour (could use GF or spelt)
2 tblsp milk
1tblsp chia seeds
Here’s what you do:-
* Mix all ingredients until combined – approx 20secs/speed 5
* Tip mixture into paper cupcake cases and bake in a moderate oven for approx. 15 mins, or until a skewer comes out clean.
* Let them cool on a wire rack and ice once cooled
100-150g icing sugar
Juice from half a lemon
100g butter, room temp
Mix 30secs / speed 4. If icing is too runny add more icing sugar, if its too hard, add some milk or more lemon juice. You may need to mix it with your spatula towards the end to get the right consistency.
Tip – use the squished lemon to wipe out the sink or any chopping boards. Or you could add it to the bowl and cover blades with boiling water. Blitz 20 secs/speed 8. You will now have a clean and fresh bowl.
