Apricot coconut balls – Dairy free, Wheat free & Nut free

These delicious balls of goodness are great for lunch boxes.  They are nut, dairy and wheat free but could possibly be gluten free if you could find some GF oats.

Apricot balls

Before I start with the recipe, we use organic apricots as they are sulphur dioxide free.  Dried apricots should be brown, not bright orange.  If it has additive 220 (sulphur dioxide) then I wouldn’t use them.  Same goes for any dried fruit, including desiccated coconut.

According to Additive Alert, additive 220 (sulphur dioxide) is linked to gastric irritation/damage, hyperactivity, behavioural problems, possible mutagen and can be fatal to asthmatics.  YUK!

Ok, lets get to the recipe 🙂

Dried apricots

This is what you’ll need:-

60g oats
150g dried apricots
50g sultanas
2 tblsp coconut oil (melted)
70g desiccated coconut and extra for coating balls
1 tblsp freshly squeezed orange juice (or water)

Here’s what you do:-

Put oats into tmx and chop them a little finer, speed 7 for 5 seconds

Put apricots and sultanas into tmx and chop on speed 8 for 10 seconds

Add orange juice (or water) and mix it on speed 2 for 5 seconds.  Let this soak for about 1 minute.

Add coconut and coconut oil and mix on speed 7 for about 25 seconds or until it comes together.

Roll them into balls and coat in coconut or oats.
